Orecchiette with Italian Sausage & Broccoli Rabe

One of my favorite go-to pastas couldn't be simpler... cook some hot Italian sausage, add chopped broccoli rabe (I don't even bother to blanch it... I like the bitter edge), a ton of garlic, some red pepper flakes and then a bit of liquid... chicken stock is fine, but if you're feeling decadent... then...

Cream's the way to go.

Cook until the rabe begins to soften.  I also like to add a bunch of chopped sage... but then again, I'd probably put sage on cereal!  Toss with a favorite pasta, and top with some Parmesan.

This is also great on soft polenta.  (And as you can see, I also added a few pignolis... just for fun!)
