Fire Fat Salt

Do you ever wonder why, even though you're a really good cook, your version of a dish doesn't taste quite the same as the restaurant version did?

I'll let you in on an awful little secret:  Salt and Fat.

In many cases, the reason yours tastes... different... is simply the amount of salt and fat that restaurant chefs put into their dishes.

And another thing that sets restaurant food apart:  Heat.

Chefs are not afraid to sauté at HIGH heat... and their stoves often put out more BTUs than yours does. Now, having said that, we also need to remember that restaurants have access to great quality ingredients, and an army of people prepping, simmering stocks, reducing sauces, etc.   And... they cook for a living!

So... my suggestion is:  embrace the fact that there's a difference!

Pay a little more attention to your seasoning... Buy good ingredients!  Don't be afraid of salt, fat, and fire...

BUT...

Don't start over-salting or adding a pound of butter to everything while burning things on high heat!!!  You'll drive yourself crazy trying to make things taste exactly like a restaurant meal (and your heart and arteries will NOT thank you!).
