(Faux) Broccoli Rabe Pasta with Italian Sausage

I am, again, a very bad boy.

One of my favorite foods is pasta with sausage and broccoli rabe.  But the rabe at the store was crappy. However... the broccoli was not. So I employed one of my favorite bait-and-switches... finely minced broccoli mixed with shredded arugula!  The broccoli provides the... broccoli... and the arugula provides a strong hit of the bitterness that the rabe would have added.

So, as usual, I stared out by sautéing... All Together Now... a ton of garlic... with crumbled hot Italian sausage... in EVOO...

Then I sautéed finely minced broccoli, red pepper flakes, and a little water to steam-sauté the broccoli without browning the garlic.  When the broccoli was crisp tender, I added handsful - or handfuls - of chopped arugula, a splash of white wine, and the sausage.

This reduced for a few moments, and then I added the almost cooked pasta... reserving, of course, some pasta water.

I allowed the pasta and broccoli mix to marry for a bit, thinned the sauce with pasta water, turned the stove off, added some Parmesan... tasted for salt...

...Poured a glass of pinot noir, and really REALLY enjoyed myself.
