Charlie was feeling a little nostalgic for his days in Vienna... and it was snowing... so I thought a faux Austrian meal was in order...
I had been given some turkey breast... so Putenschnitzel was in order! And we still have a hoarded bottle of dangerously green pumpkinseed oil (obtained from the Styrian farmer who pressed it)... so a salad was a must. And in a nod to global cuisine, I was also in the mood for some simple sage-infused Tuscan cannellini beans...
I sliced and pounded the turkey breast thin... salted, peppered, and floured it... dipped it in egg, and then in bread crumbs... sautéed it in hot oil... and dressed it simply with lemon wedges. The salad was baby arugula dressed with pumpkin seed oil - Trust me, it's worth seeking this out. The flavor is unreal but, be prepared, it stains like nobody's business! - and a bit of vinegar and salt.

The beans were cannellini beans cooked with a ton of garlic, chopped sage, red and black pepper, and smoked salt and, shockingly, this Italian interloper tied the whole meal together.
Combine this meal with a beautiful fire, perfect company, and a crisp Chablis... heaven in Yonkers!
