Cold Sesame Noodles with Shrimp

It was a shockingly warm day for early May in Yonkers... and I wasn't called for filming... and I had some shrimp that I'd cooked a couple of days ago... and you all know how big I am on giving food an "encore..."

So, I took some remaining pasta dough from another night... rolled it out and cut it into very very thin noodles... Boiled it and cooled it... Then I made a sauce from garlic, peanut butter, sriracha, lime zest and juice, soy sauce and a touch of water...

I added the shrimp, and tossed it with the cooled noodles... I topped this with sliced scallions, chopped cilantro, and a scattering of chopped peanuts...

Very, very satisfying, and yet light... Perfect for a warm spring night.
