Chicken Saltimbocca with Cannellini Beans and Roasted Cauliflower with Gruyére, Cheddar and Caraway Seeds

 

In a belated celebration of his birthday, Charlie received a lovely Medoc from a wonderful friend who prefers to remain anonymous...

And that called for a dinner to match!

So I made a chicken saltimbocca...

...using shavings of prosciutto from the "ends" my guys at Teitel Bros. offered me at such wonderful price.  I also had some very plain cannellini beans I'd cooked the day before, so I flavored them with garlic and sage sautéed in EVOO.  Next I roasted some of the (also on-sale) cauliflower I'd bought earlier in the week, then scattered a teaspoon of caraway seeds and some grated gruyére/cheddar blend over the top.  (Thank you again, Eric Damon Smith, for introducing me to that lovely inexpensive cheese from "Trader Vic's.")

For a sauce, I just reduced a bit of cream with sage, some shallots, and a bit more of the prosciutto (since it's so inexpensive, I can go wild with it!).  It was a lovely way to drink a lovely wine...
