Black Bean-Quinoa Burgers with Sriracha Mayo and Tomatoes

I had some cooked quinoa.

I had some soaked and cooked black beans.

I was feeling like a healthy meal... that had to be really tasty.

BURGERS!!!

In 1T of EVOO, I sautéed 1 minced onion, a few minced cloves of garlic, and 1 T tomato paste.  I added a teaspoon of curry powder and a teaspoon of ground cumin.  Then I sautéed it all for a minute and turned the heat off.

In a bowl, I combined 1/2 C cooked quinoa, 1 C cooked black beans, 1/2 C regular oatmeal that I processed to a powder, 1 egg white, 1T Worcestershire sauce, and 2t sriracha.  I mixed this well... making sure to break up most of the beans...  I molded this mixture into patties and sautéed them in EVOO...

I split a section of baguette... slathered on a bit of sriracha mayo... and topped it all with tomato slices and some sliced scallions.

No, these burgers will not convince you that you're eating beef, but when they taste this good you won't be saying, "Where's the beef?"
