We had been doing Blithe Spirit for a few days... including Act I in the rain one night...
But the next night Much Ado returned, so I was looking at the script again... and I wanted something light for my pre-show dinner...
So I made some bulgur (all you need to do is pour some boiling water on the bulgur and let it sit for a half an hour), sliced some scallions, chopped up some arugula, and sautéed some minced broccoli. I then tossed all of this with some EVOO, salt, pepper, sriracha, and a dash of balsamic vinegar...

Light, healthy, and REALLY satisfying! And while all this was happening, I was also making some green lentils so that, when this dinner was ready for an encore, the addition of the lentils would make it a whole new dish!
