As you can see, this meal consisted of a hamburger (good 80/20 ground beef with some sriracha and smoked paprika mixed in) on a bed of undressed arugula...
But the newest member of the team was a very easy, really fun, and really tasty sweet potato pancake.
I peeled a sweet potato, shredded it in the food processor with a small onion (using the shredding disc). To the shreds I added an egg, some salt and pepper, a teaspoon of baking powder, and 1/4 cup of flour. I mixed it all well, heated some EVOO in a big non-stick pan on medium heat, and fried half-cup cakes...
Crispy on the outside and like sweet potato custard on the inside... with a dollop of sour cream...

I think this may just be the way to keep sweet potatoes on the Thanksgiving table without the dreaded marshmallow topping!!!
