Which reminds me...
Back in December, we were getting ready to fly to L.A. for the annual Christmas gig, and I wasn't about to spend $1 or $2,000,000 on food at the airport or on the plane!
I had some pizza dough I hadn't used, and two pieces of chicken left over from trimming and pounding chicken for schnitzel. So I gently poached the chicken, then let it cool in the liquid. I rolled and stretched out the dough in a baking dish, let it rise, drizzled it with EVOO, a pinch of good salt, and baked it at 375° to make a sort of faux focaccia which I could then split and use to make chicken salad sanwiches.
I cubed the poached chicken, added minced scallions and a lot of minced celery, and some homemade mayo that needed to be used (it really couldn't last until we returned from L.A.).

These sandwiches happily held us during the 8 hours from Yonkers to Glendale...
