There was another cod sale at Fairway today... so it seemed that fish 'n' chips was in order. Deeply, madly, truly in order...
I cut 1 pound of cod filets into similarly sized chunks... Dipped them in a very simple batter of ½C flour, ¼C milk, ¼C water, ⅛C baking powder, and a dash of Old Bay...
Then I fried the fish in 375° oil until dark golden brown ( about 3-4 minutes)...
Served it on a bed of undressed arugula... with a quick tartar sauce made of mayo, lemon zest , and chopped capers, with a side of deliciously crispy sautéed potato cubes standing in for the chips!

Not an everyday meal... but a delightful and wonderful treat nonetheless.
