Faux Stroganoff with Arugula

I had an idea.  A few nights ago, I told you about the faux Stroganoff pasta I made. Well, there was enough in the fridge for at least two more meals, but... going along with my "listen to your body" mantra...

I wanted some greens.  And a salad just wouldn't cut it.  So...

I took a few big handfuls of washed arugula, chopped it, nuked it for about 30 seconds, added some of the faux Stroganoff and heated that until the pasta was just warmed through (making sure not to let the microwave overcook it), stirred it up, checked for seasoning...

And sat down to a very hearty but not at all heavy meal that, because of the greens, was completely different in character from the original.
