Yes, Dear Reader, I just said "hankerin'..."
...for chicken paprikash, a meal we used to have frequently with our good friend Woody Romoff, a wonderful actor who's been dead for a shocking number of years.
So: I sweated 2 minced onions in butter for about 40 minutes. I added 2T (Yes, really!) of good fresh Hungarian paprika. Now, most recipes say "sweet." I like a bit of heat, so I used half sharp with a bit of smoked thrown in... but you feel free to use any paprika combo you like!
I added a bit of salt and pepper, and a clove of micro-planed garlic, and cooked it all on low for about 10 more minutes. Then I added large cubes of chicken breast, cooked until just barely pink, and poured in 1C of homemade chicken broth. I let the chicken finish cooking, and, off the heat, stirred in 1/4 C sour cream.
Finis!

Not being in the mood for noodles, I served this atop a mound of firm mashed potatoes.
Oh yeah... Mmmmmmm...
