Farfalle Pasta with Shiitake Mushroom Cream Sauce

OK...

Don't tell anyone, but because of one of my many food-world jobs, I now have access to a restaurant supply store...

Shhhhhhhhhhhhhhhh!

Three pounds of gorgeous Shiitake mushrooms for 10 bucks!  I couldn't say no!

So dinner, of course, was pasta... I used farfalle, but if you're up for making fresh:

Sauced with sautéed shiitakes, onions, garlic, first-of-the-season fresh chives, tarragon, sage, and thyme... a bit of pasta water... a bit of heavy cream... and some wonderful Dragunera smoked salt...

With a bit of Parmigiano... and a final sprinkle of spicy ghost pepper salt...

Heaven!!!
