A few months ago, I posted about making a Spanish(ish) tortilla... and I did it in the form of a filled omelet. But one night a few weeks ago, I just wasn't interested in even the minimal effort that a good, soft, correctly cooked omelet required...
So I decided to make scrambled eggs that contained all of the elements of a tortilla...
Some browned, cubed potatoes, diced chorizo sautéed long enough to render a bit of the fat and crisp them a bit, some sautéed onions and peppers, garlic, and smoked paprika... all stirred into the eggs about one minute before I thought they'd be done.

I admit, an omelet is not hard.
I also admit that laziness takes hold of me on occasion.
This was the best of both worlds!
