Comfort Needed (Pasta with Prosciutto, Duxelles and Parmesan)

The other night we were feeling in need of a little comfort.  We had worked very hard catering a big fundraiser, and pasta seemed to fit the bill...

I realized I had a little bit of prosciutto in the fridge but, seeing as it was February and very cold, I had no fresh sage in the garden.  So I went through my brain's list of other compatible flavors... and remembered that I had (of course!) a big bag of duxelles (OK, OK, post to follow!) in the freezer.

So... I sautéed some onion and garlic, added about a quarter of a cup of the duxelles and a healthy splash of white wine.  I reduced the wine a bit and then added some stock.  Then a bit of cream and, just before the pasta was ready, I added the thinly sliced ribbons of prosciutto... then added the not-quite-done pasta... and simmered for about a minute... adding pasta water as needed.  Then I turned off the heat and added some Parmesan.
