One of my stores recently had a “wild-caught” cod special… and I am nothing if not frugal… OK… REALLY CHEAP…
I bought a one-pound piece… salted and peppered it… dusted it with flour… and sautéed it quickly in butter and EVOO. And when I say “quickly…” I mean it! No need to be afraid of fish cookery. Do it hot and fast and you’re golden (and so is the fish!!!)
I mixed some sour cream and Dijon mustard for a sauce, and served it on a bed of my favorite Pardina lentils… cooked with onion, celery and carrot.
See… there are ways to have fish without a huge pot of boiling oil!

Between the sweet fish, the earthy lentils, and the VERY bright sauce… this was a fun meal.
