Cheese Toasts

If you're looking for a little nosh, and have no idea what to do... try this...

A few slices of leftover baguette broiled on one side, a few "ends" of cheese grated and mixed with a bit of mayo, and/or mustard, salt and pepper, a dash of hot sauce...

Slather that mixture on the untoasted side, and broil for about 1-2 minutes until they are the color you like... et voilà!

It's almost a version of the old WELSH RABBIT or RAREBIT served at my home while I was growing up.  And a GREAT way to use up cheese ends...
