Every now and again, I let my herbs flower. I know, I know... but the flowers are gorgeous, the bees love them (and at this moment in the Earth's history, we have to do whatever we can to make the bees happy!) and they're great to add to scrambled eggs, salads, mashed potatoes. Just make sure that after they've flowered, and you've used the ones you want... cut the herb plants back below where the flowers were, and you'll be fine.
