I've been home for just over two weeks...
And I'm leaving again in... two weeks.
So, because I know we'll be apart again... and we don't deal well with separations... I have been a Very Bad Boy, food-wise. Lots of pasta, many sauces, many pizzas, lots of meat... Winter comfort foods on steroids!
But of course this has begun to tell... feeling a little sluggish, etc.
So I had an idea...
I had some cooked Forbidden Rice... I bought some bulgur over the weekend (couldn't be easier... soak about ¾ C in 3C of boiling salted water, covered, for 20 minutes... drain and squeeze).
I combined the rice and bulgur... added minced scallions, fresh tomatoes, and some crisp, blanched broccoli... tossed in a bit of vinaigrette... OK... I threw in some lentils as well...
BELIEVE ME, this really is just as satisfying as the heavy stuff... and you'll get a Gold Star from your nutritionist as well!
