Another Day After (The Annual Turkey Hash)

 

Yes...  Hash may seem commonplace...  But it's soooooooo good that one must just go with it!

I brown small cubes of raw potato in EVOO, with lots of salt and pepper, then move them to a bowl. Next I brown diced onions and diced celery, and add it to the potatoes.  I add tons of chopped fresh sage... a bit of the Thanksgiving gravy... a big bunch of diced Thanksgiving turkey...

Reheat all of it... taste for salt... add a ton more black pepper.  When it's all hot, I plate it and top it with a bit of sour cream, or drained yogurt, or even (don't tell anyone...) a dollop of onion chip dip!!!  It really is one of the great flavor combos of all time!
