Greek Salad Pizza

I'm sure you've noticed that there are a lot of pizzas in the photo section.  I'm an addict!  I could eat pizza all day every day forever.  And while I do have some faves, what I really like is to imagine ways to take a non-pizza dish and see how I could make a pizza out of it.  That was the inspiration for my Greek Salad Pizza...

A little spinach or arugula, some sliced onions, oregano, feta, Kalamata olives and, for the last few minutes of cooking, some great chunks of very flavorful tomatoes.  You can partially cook the onions and greens if you want, or they can go straight on to the uncooked dough.  I like to take the pizza out about 3-4 minutes before it's done, scatter the tomatoes, and put it back to finish cooking.  That way the tomatoes just barely start to soften, and you still get the snap of fresh!
